Tacos or Fajitas
Taco shells or fajita wraps
1⁄2 - 1 packet of taco seasoning, low sodium*
1 onion, chopped finely
8 oz mushrooms, diced
1/2 - 1 red pepper, diced
3⁄4 cup diced tomatoes
1⁄2 cup frozen corn
1⁄2 cup greens, chopped finely (collard greens, swiss chard, kale, or spinach)
Vegan cheese (Daiya)
Sour Cream (Tofutti)
Heat a large skillet on medium. Throw everything (except the shells) in the pan and cook until it’s all soft, about 20 minutes.
Put the mixture on the bottom of a shell/wrap and add your choice of toppings. Wrap it up and eat!
*Season to taste with the packet – the flavour can be strong and it’s also very salty so don’t add it all at once.
