Choose your favourite vegetables in any amount - fill your skillet:
Rice (1 1/2 cups)
OR pasta (for 2-4 people)
Ingredients for Sauce:
1⁄4 cup soy sauce, sodium reduced
1 cup vegetable stock or water
2 tsp sugar
2 tsp cornstarch
Put on a pot of boiling water for pasta (or if you’re making rice, use 3 cups of water).
Heat a skillet over med-low heat and add 2 tsp light olive oil or vegetable stock. Chop up the onions, mushrooms and celery and add them to the pan, stirring occasionally.
Next add the garlic and red pepper.
Add rice or pasta to the pot and set a timer (10 minutes for pasta, uncovered; 20 for rice, turn it to low and keep a lid on it.)
Then chop the broccoli, cauliflower and carrots. Microwave them separately until they’re soft (approximately 3 minutes each).
Make the sauce.
Add all the vegetables to the pan and mix the sauce in. It will thicken as it warms. Serve over your pasta or rice.
