Tofu Scramble and Vegan Sausage

Ingredients:

1 block firm tofu, drained and patted dry

1 package of vegan sausages (or vegan bacon)

 

Optional Ingredients:

seasoning for tofu scramble (basil, garlic, turmeric, taco seasoning etc.)

vegan cheese and/or nutritional yeast

tomatoes

onion

corn

mushroom

kale

toast

 

Heat a large fry pan on medium with a tsp of light olive oil.

Chop up the veggies of your choice and add them to the pan. Once the vegetables are soft and browned, crumble the tofu in. Stir it all together with the seasonings you like.

Cut up the sausages and fry beside the tofu until brown. (You can use a separate skillet here if you want.) If the tofu browns too quickly, remove it from the heat or add some water/vegetable stock to keep it from sticking.

Top with cheese, if using, and serve hot with toast and guacamole.
