Oatmeal Muffins

30-50 minutes


1 cup oats (I use quick oats)

1 cup boiling water

2 tbsp chia seeds

1 cup brown sugar

½ cup coconut or canola oil

1 tsp vanilla

1 cup flour

1 tsp baking soda

2 tsp baking powder

½ tsp cinnamon

¾ cup chopped dried fruit (raisins, craisins, dates, apricots etc.)


Preheat the oven to 350 degrees.

Mix the oats and boiling water in a small bowl and set it aside for 20 minutes, unless you’re using quick oats – they’ll be ready almost immediately.

Make the chia eggs by mixing 2 tbsp of chia seeds in 6 tbsp of water and set it aside to gel.


Prepare a muffin pan by lining it with cups or rubbing the inside with oil.

In a large bowl mix the sugar, oil and vanilla; then add the oatmeal and chia eggs. Finally add all the dry ingredients and mix well.


Spoon the batter evenly into the muffin pan and bake for 16-20 minutes.
