Pear Salad with Candied Almonds

Ingredients:

½ pear (apple works too), sliced or chopped

¼ cup of sliced almonds

1 tbsp white sugar

¼ cup craisins

½ avocado, chopped (optional)

leafy greens

 

Dressing:

¼ cup white sugar

½ tsp dry mustard

2 ½ tbsp red wine vinegar

¼ cup canola oil

 

In a sauce pan over medium heat, add the almonds and sugar. Once the sugar starts to melt, stir it quickly and remove to a different plate to cool. Watch it very closely, the sugar burns easily. It will take approximately 3-5 minutes depending on the temperature of your element.

 

While your almonds cool, add the fruit, avocado and lettuce to a big bowl. Mix the dressing and pour half over top of the salad (the rest will keep in an airtight container in the fridge). Break apart the cooled almonds to sprinkle on top and toss everything together.
