Complete Suppers
Pad Thai
30 minutes

Ingredients:
2 tsp sesame oil
2 tsp minced garlic
2 tsp minced ginger
1 onion, chopped
1⁄2 large purple or green cabbage, sliced finely
1 red pepper, julienned
1 cup broccoli, cut into bite-sized pieces
2 large carrots, julienned
peanuts for the top
pasta for 2-4 people
Ingredients for Sauce:
1⁄4 cup soy sauce
2 tbsp peanut butter or tahini
1 tbsp of miso paste (optional – bought online)
1 tbsp rice wine vinegar
2 tsp maple syrup
And a dash of sweet chili sauce
Boil a pot of water for pasta.
Heat a skillet on medium and add the sesame oil, garlic, ginger and onion
Slice the cabbage and add it to the skillet, then the carrots and red pepper.
Cut the broccoli and steam it separately in the microwave for 3 minutes before adding it to the pan.
While the vegetables are cooking, make the sauce and cook the pasta (10 minutes uncovered, in boiling water). Add the sauce to all the vegetables and simmer until the veggies are soft. Stir the vegetables and noodles together and top with peanuts to serve.
