Complete Suppers

Lentils and Rice

30 minutes

Ingredients:
1 cup dried green lentils

1 tbsp olive oil

1⁄2 onion, chopped finely
1 tbsp minced garlic
1/3 cup hummus
3 tbsp tahini or peanut butter

1-2 tbsp dried dill

1 tsp maple syrup

2 tbsp lemon juice

1/2 cups rice

your choice of vegetables to stir fry

**I just discovered that this dish tastes great with pickled beets on the side! If that's your thing!**

In a large pot, heat the oil on medium and fry the onion and garlic until they’re fragrant (5 minutes).

Remove them from the pan, turn the heat on high and add the lentils with two cups of water. Bring the lentils to a boil, then turn them down to a simmer for about 20 minutes or until the lentils are soft.

Meanwhile heat another pot with 3 cups of water for the rice. Once the water has boiled, turn it down low and cover it. Let it cook for 20 minutes.

 

Chop and stir fry your vegetables in a frying pan with a tsp of oil, vegetable stock or water.

 

When the lentils are done, stir in the onion and garlic, and then the rest of the ingredients. Serve with the rice and stir fry.
