Complete Suppers
General Tso
35 minutes

Ingredients:
1 1⁄2 cup rice
1 block of firm tofu
1 red pepper, diced
1 handful of green beans (I use frozen)
1 cup broccoli or frozen corn (for the side)
Ingredients for Sauce:
2 tsp sesame oil
2 tsp cornstarch
1 tbsp minced garlic
1 tbsp minced ginger
1 tbsp rice vinegar
1⁄4 cup maple syrup
3 tbsp soy sauce
sesame seeds for serving (optional)
Bring 3 cups of water to a boil and then add the rice. Cover and let it simmer on low for 20 minutes.
Heat the sesame oil in large saucepan, on medium (use a cast iron skillet here if you have one).
Dry a block of tofu (by squeezing out the liquid) and cut it into cubes. Let it fry for the next 20 minutes (flip the cubes occasionally), they should be light brown on most sides and crispy.
Meanwhile, make the sauce and chop the vegetables. Add it all to the cooked tofu and cover, letting it simmer while the vegetables cook (5 minutes).
Microwave the frozen corn or steam broccoli while the General Tso finishes cooking.
Serve over the rice and sprinkle some sesame seeds on top.
