Make-Ahead Ingredients

Red Curry Paste

15 minutes

Red curry paste can be bought, but it’s hard to find a vegan brand.



1 cup chopped onion

¾ cup diced tomato

1 tbsp grated ginger

3 tbsp minced garlic

1/2 tsp cayenne pepper

1 tsp fennel seeds OR ½ tsp caraway seeds

1 stick of cinnamon

1 tsp garam masala

2 crushed cardamom pods (optional)

8 cashews


Sauté all the ingredients for 5 minutes, it will become very fragrant. Remove the cinnamon stick and cardamom pods and then blend until smooth. Store it in an airtight container in the fridge or freezer.
