Burgers & Fries

This recipe is taken from Oh She Glows


1 bag frozen fries

4+ burger buns

Burger Ingredients*:
3 tbsp ground flax
1/3 cup warm water
1 can black beans, drained and rinsed

1 tbsp light olive oil
3/4 cup finely chopped onion

2 tbsp minced garlic
1 cup grated carrots

1 tbsp dried parsley

1⁄2 cup sunflower seeds

1 tbsp soy sauce
1 tsp chili powder

1 tsp dried oregano
1 tsp ground cumin
1⁄2 cup rolled oats, processed into a coarse meal

1⁄2 cup bread crumbs
1 to 2 tbsp flour

*Alternatively - Buy vegan burger patties and cook according to package. That’s what I’ve done in the picture.

Preheat the oven to 425 degrees.

Make a flax egg by whisking flax and water together in a small dish and set it aside to thicken.

Turn a skillet on to medium heat and add oil, garlic and onion. Cook until the onion is soft.

Meanwhile, in a large bowl mash the black beans into a chunky paste. Add the onion mixture. Then mix in the grated carrot, seeds and seasoning. Finally add the rest of the ingredients and combine well. Shape the dough into patties.

Bake the patties and fries, on two separate baking sheets for 12 minutes on each side, OR according to the package.

Serve hot on burger buns with your choice of toppings.
