Ingredients:
Lettuce/spinach
Your choice of veggies - carrots, beets, tomato, celery, sprouts, radish, cucumber etc.
2 tbsp hummus
lemon juice
Chop up your favourite vegetables and add them to a big bowl of leafy greens.
Thin out 2 tbsp of hummus with a drizzle of lemon juice and pour over the salad. Toss and serve.
