Chocolate Chip Cookies
½ cup coconut or canola oil
1 cup brown sugar, lightly packed
1 tbsp vanilla (yes, a tablespoon)
1/4 cup plant-based milk, I used almond (unsweetened)
2 cups flour
1 tsp baking powder
1 tsp baking soda
3/4 cup vegan chocolate chips
Preheat the oven to 350 degrees.
Mix the oil, sugar, milk and vanilla well. It will be very liquid. Add the flour and then sift in the baking soda and powder. Mix well. Fold in the chocolate chips.
The dough will be crumbly but that's okay. Roll it into balls - about a tbsp each and bake them for approximately 8 minutes. As soon as they come out of the oven, smush them down a bit with the back of a spoon.
