1 tbsp chia seeds
3 large spotty bananas (if previously frozen, heat in microwave until soft)
¾ cup sugar
1/3 cup coconut or canola oil
1 tsp vanilla
1 cup flour
½ cup quick oats
1 tsp baking soda
1 tsp baking powder
½ cup vegan chocolate chips (optional)
Preheat the oven to 375 degrees.
Make a chia egg by mixing 1 tbsp of chia seeds in 3 tbsp of water and set aside to gel.
Prepare one muffin pan with baking cups or rub oil inside.
Mash or blend the bananas in big bowl then add the sugar, oil, vanilla and chia egg and mix. Add the dry ingredients on top and mix again.
Distribute the batter evenly into the muffin pan and bake for approximately 16 minutes.
